Chicken Genovese pasta

Ingredients

  • 350g tagliatelle, dried

  • 250g fine green beans, trimmed
  • 3 The Co-operative Healthy Living Elmwood chicken breasts; cut into chunks
  • olive oil
  • 90g Italian pesto sauce
  • black pepper
  • 1 lemon, juiced

Recipe method

1. Cook the pasta, adding the beans for the last 4 minutes of the
cooking time.

2. Heat a chargrill pan to hot. Rub the chicken with a little olive oil
and cook for 4-5 mins on each side until charred.

3. Drain pasta and beans and stir in pesto, black pepper and lemon juice. Season. Pile into serving bowls and top with chicken
