Spiced chickpea & spinach rice

Ingredients

  • 1 large red onion; cut into thin wedges

  • 2tsp curry powder
  • 100g packet dried fruit mix
  • 250ml vegetable stock
  • 400g can chickpeas; drained
  • 2 x 250g pack partly cooked basmati rice
  • 150g fresh spinach leaves
  • black pepper
  • large handful fresh coriander; chopped

Recipe method

1. Heat the onion, curry powder, dried fruit mix and 200ml stock in a pan, stirring. Bring to the boil and simmer for 10 mins.

2. Add the chickpeas, rice, spinach and rest of stock. Simmer for 4-5 mins until the spinach is wilted. Season with black pepper and scatter with coriander.
