Tuna bean salad

Ingredients

  • 1 twin pack little gem lettuces

  • 185g can tuna chunks in water
  • 410g can cannellini beans; drained and rinsed
  • 198g can sweetcorn, drained
  • pinch mild chilli powder
  • 1 small red onion; sliced
  • 12 ripe cherry tomatoes; halved
  • 1 lemon; juiced
  • black pepper

Recipe method

1. Trim the lettuces and cut each one lengthways into 6 wedges.

2. Drain the tuna and flake into a bowl. Add the cannellini beans, sweetcorn, chilli powder, onion, tomatoes and lemon juice.

3. Season with black and mix with the lettuce
