Vietnamese salmon noodles

Ingredients

  • spray olive oil

  • 500g salmon fillets; skinned
  • 1tbsp sweet chilli sauce
  • 200g rice noodles
  • 200g carrots; shredded
  • 200g cucumber; cut into strips
  • 150g beansprouts
  • 50g spring onions; finely sliced
  • ½tbsp red chilli; finely sliced
  • 5tbsp mint leaves
  • 4tbsp basil leaves
  • 4tbsp fresh coriander leaves
  • 1 lime; cut into wedges, to serve.For the dressing
  • 3tbsp lime juice
  • 1tbsp Thai fish sauce
  • 1tbsp sweet chilli sauce
  • 1tbsp olive oil

Recipe method

1. Lightly spray a frying pan with oil and sear the salmon for 3 mins on each side, leaving it pink in the middle. Cool then flake into pieces.

2. Meanwhile, put the noodles in a bowl, cover with boiling water and leave for 4 mins. Tip into a colander and drain well.

3. Whisk the dressing ingredients in a large bowl, then add all the vegetables, chilli, drained noodles, salmon, mint, basil and coriander. Mix and divide among 4 plates and serve with lime wedges.
