  • 500g The Co-operative line-caughtIcelandic haddock fillets, skinned

  • Spray oil

  • 25g golden breadcrumbs

  • 1 lemon, juiced and rind grated

  • 1 small garlic clove, chopped

  • 2 tbsp chopped fresh parsley

  • black pepper

  • 500g The Co-operative Farms British Maris Piper potatoes, peeled and diced

  • 4 The Co-operative trimmed salad onions, chopped

  • 2 tbsp The Co-operative reduced-fat crème fraîched

Preheat the oven to 190°C/Gas5. Pat the fish dry and place on an
oiled baking sheet and pour over the lemon juice.Haddock Onion Mash Traffic Light Labelling

2. In a bowl, mix the breadcrumbs with thelemon rind, garlic, parsley and pepper. Press the mixture on to the fish and mist with oil. Bake for 15-20 mins, until the fish is cooked.

3. Meanwhile, boil the potatoes for 10-15 mins, until tender. Drain and mash well. Fold in the onion, crème fraîche and pepper. Serve with the fish.
