1x 500g pack puff pastry2 small (approximately 325g) The Co-operative cod fillets, skinned100g (3½ oz) cooked ham slices15ml (1 tbsp) dark soy sauce15ml (1 tbsp) dry sherry4 spring onions, finely chopped1 egg, lightly beaten
Preheat the oven to 190°C, 375°F, gas mark 5.Roll out the pastry, and cut out 8 circles using a saucer as a guide. Place the fish, ham, soy sauce and sherry in a food processor and blend until coarsely minced. Mix in the spring onions.Place a couple of teaspoonfuls of the mixture onto each pastry circle. Brush around the pastry edge with egg, then fold over and firmly seal.Place on a baking sheet, brush with the remaining beaten egg, and cook for approximately 15–20 minutes or until golden and puffed.Delicious served warm, accompanied with a vegetable stir-fry or a crisp salad and sweet chilli sauce for dipping.
