Chinese-style fish and ham puffs

ingredients

1x 500g pack puff pastry
2 small (approximately 325g) The Co-operative cod fillets, skinned
100g (3½ oz) cooked ham slices
15ml (1 tbsp) dark soy sauce
15ml (1 tbsp) dry sherry
4 spring onions, finely chopped
1 egg, lightly beaten

 

method

Preheat the oven to 190°C, 375°F, gas mark 5.

Roll out the pastry, and cut out 8 circles using a saucer as a guide.

Place the fish, ham, soy sauce and sherry in a food processor and blend until coarsely minced. Mix in the spring onions.

Place a couple of teaspoonfuls of the mixture onto each pastry circle. Brush around the pastry edge with egg, then fold over and firmly seal.

Place on a baking sheet, brush with the remaining beaten egg, and cook for approximately 15–20 minutes or until golden and puffed.

Delicious served warm, accompanied with a vegetable stir-fry or a crisp salad and sweet chilli sauce for dipping.
