Apple and blackberry crumble

ingredients

675g (1½ lb) Bramley apples
100g (4oz) soft brown sugar
grated rind of 1 orange
juice of 1 lemon
175g (6oz) blackberries
150g (5oz) plain flour
75g (3oz) caster sugar
75g (3oz) butter
50g (2oz) rolled oats
1.5ml (½ tsp) ground cinnamon

 

method

Preheat the oven to 180°c, 450°f, gas mark 4. lightly grease an oven proof dish. Then peel, core and thickly slice the apples. place in a saucepan and add the brown sugar, orange rind, lemon juice and 50ml (2fl oz) water.

Bring to the boil and cover and simmer for about 6 minutes or until the apple is softened. remove from the heat and stir the blackberries into the prepared dish.

Place the flour in a mixing bowl and rub in the butter, until the mixture resembles breadcrumbs.

Stir in the caster sugar, oats and cinnamon. sprinkle mixture over the apple evenly and bake in the centre of the oven for 30–40 minutes until golden.

Serve with Co-operative ready-made custard.
