Apple and flapjack pudding

ingredients

300g (10.5oz) Royal Gala or Red Falstaff apples
15g (½ oz) caster sugar
25g (1oz) raisins
25g (1oz) Co-operative sunflower spread
15ml (1tbsp) golden syrup
100g (3½ oz) oats

 

method

Preheat oven to 180°C, 350°F, gas mark 4. Core and chop apples. Place in a pan with 15ml (1tbsp) water. Add sugar and cook for a few minutes until softened. Add the raisins, then place in an ovenproof dish.

Melt the margarine and golden syrup together in a pan, and stir in the oats. Spread over the apple. Bake for 20–25 minutes until golden.

Serve with Greek yogurt or crème fraîche.
