Apple and blackberry cupcakes

ingredients

450g fresh blackberries
125g caster sugar
125g butter
1-2 dessertspoons sugar
125g self-raising flour
25g cornflour
1/2 tsp baking powder
1/2 small eating apple
1 tsp fresh whole milk
2 medium-sized eggs, beaten

To decorate:

140g icing sugar, sifted
70g unsalted butter
1/2 tsp vanilla extract
Fresh blackberries

method

Put the blackberries in a saucepan with caster sugar and simmer gently until soft.

Cool.

In a separate bowl, cream the butter and sugar until light and fluffy, add the eggs, flours, baking powder and peeled and grated eating apple.

Stir in milk.

Pile into cake cases.

Cook in gas mark 4/180°C/fan 160°C oven for 15–20 minutes.

When cool, cut a tiny circle out of each cake. Fill with cooled berry mix.

Beat the butter and then add icing sugar and vanilla extract.

Pipe onto cakes and top with a fresh blackberry.
