Fairtrade apple sauce

ingredients

3 large apples (try seasonal Red Falstaff apples for a pleasantly sharp twist)
140ml of medium dry cider
25g butter
juice and rind of half a Fairtrade lemon
1 tablespoon of caster sugar

 

method

Peel and core the large cooking apples and cut into slices of even thickness.

Place the sliced apple, cider, caster sugar and lemon rind into a medium-sized pan over a high heat with the lid on.

After 5 to 7 minutes the apples should be mushy and sweet with a hint of lemon – add more sugar to taste if you like your apple sauce particularly sweet.

Remove the apple sauce from the heat and stir in the butter (now is the time to blend it if you want a smooth sauce).

Season to taste and serve immediately, or leave to cool if you prefer.

Tips

Apple sauce is delicious served with classic savouries such as roast pork, stuffed butternut squash or roast goose, or as a dessert with vanilla or cinnamon ice cream.

Add sultanas, cinnamon or finely chopped herbs for a delicious twist on traditional apple sauce.

Use water instead of cider for a simpler taste.
