Apple tarte tatin

ingredients

25g (1oz) Co-operative butter   
25g (1oz) caster sugar   
10ml (½ tbsp) Co-operative honey   
1 Co-operative red eating apple (Red Falstaff), cored and sliced   
about ½ x 375g pack puff pastry

 

method

Preheat the oven to 220°C, 425°F, gas mark 7.

Melt butter, sugar and honey in a frying pan. Bring to the boil. Simmer for 2–3 minutes until golden. Pour into an 18cm (7in) round cake tin. Arrange apple slices on top.

Take 160g of the pastry. Cut 1cm bigger than the tin. Place the pastry over the apples and tuck down the sides on the inside of the tin. Bake for 10–15 minutes or until golden.

Allow to cool before inverting onto a serving plate. Serve with cream or ice cream.
