Barbecued Moroccan lamb kebabs with fruity couscous

20 minutes + 1 hour marinating

ingredients

450g (1Ib) The Co-operative Healthy Living Iamb, cubed
1 tsp cinnamon
1 tsp cumin
½ tsp chilli flakes
½ tsp turmeric
2 tbsp of The Co-operative olive oil
1 tbsp freshly chopped mint

for the couscous

250g (9oz) The Co-operative couscous
Zest of 1 lemon
1 tbsp of The Co-operative olive oil
1 tbsp freshly chopped parsley
100g (3½oz) The Co-operative Naturally Healthy apricots, dried and chopped
100g (3½oz) The Co-operative Naturally Healthy prunes, chopped
50g (1¾oz) toasted flaked almonds 

 

method

In a large bowl, add the spices, oil and mint, and mix together well before adding the lamb. Mix thoroughly and leave to marinate for 1 hour.

Preheat the barbecue. Pre-soak 4 wooden skewers for 10 minutes.

Meanwhile, make the couscous according to the pack instructions. Add the remaining ingredients while it’s still warm and mix well.

Cook the kebabs for 15-20 minutes. Serve with couscous.
