barbecued tuna steak with avocado salsa

ingredients

4 The Co-operative Truly Irresistible tuna steaks
100ml (3½fl oz) of The Co-operative olive oil
2 garlic cloves, finely chopped
½ tsp chilli flakes
Juice and zest of 1 lemon
2 tbsp freshly chopped parsley

for the salsa

2 tbsp of The Co-operative olive oil
Juice of 1 lime
3-4 dashes Tabasco sauce
2 avocados, peeled and chopped
3 tomatoes, deseeded and chopped
1 red onion, finely chopped
Small handful of fresh basil 

 

method

Preheat the barbecue. Place the olive oil, garlic, chilli, lemon and parsley into a shallow dish and season. Add the tuna and coat with the marinade. Leave for 20 minutes.

For the salsa, add the olive oil, lime juice and Tabasco to a bowl and mix well. Next add the avocado, tomato, red onion and basil and mix together.

Cook the tuna for about 3 minutes on each side. Serve with the salsa and a handful of rocket leaves each.


Top tip – use fresh tuna instead of frozen, as the lemon juice in the marinade will 'cook' the fish if frozen.
