Chicken Genovese pasta

from the cupboard

350g dried tagliatelle (or pasta of your choice)


ingredients to buy

250g fine green beans, trimmed
3 The Co-operative Healthy Living Elmwood chicken breasts, cut into chunks
olive oil
90g Italian pesto sauce
1 lemon, juiced
black pepper

 

method

Cook the pasta, adding the beans for the last 4 minutes of the cooking time.

Heat a chargrill pan to hot. Rub the chicken with a little olive oil and cook for 4-5 mins on each side until charred.

Drain the pasta and beans and stir in the pesto sauce and lemon juice. Season with black pepper. Pile into serving bowls and top with the chicken.
