soy sauce300g The Co-operative Healthy Living Elmwood chicken breast fillets, 600g110g peanut butter120ml coconut milkpinch of chilli flakes½ tsp sesame seeds
Place 2 tbsp soy sauce in a non-metallic bowl with the chicken breast fillets cut in thin strips, and stir to coat. Set aside for 15 minutes.Drain the chicken and thread on to pre-soaked wooden sticks. Mix 1 tsp soy sauce with the peanut butter, coconut milk and chilli flakes in a pan and heat gently until slightly thickened. Put 1 tbsp sauce aside and brush over the chicken skewers.Heat the grill to medium and cook the skewers for 5–10 minutes, turning regularly until golden. Remove from the pan and sprinkle with the sesame seeds while still warm. Serve the remaining sauce for dipping.
