ingredients
4 x 150g (5oz) pieces of The Co-operative farmed Scottish salmon fillet, skinless and boneless
110g (4oz) The Co-operative Truly Irresistible ciabatta, made into breadcrumbs
2 gherkins, drained and finely chopped
6 pitted black olives, drained and chopped
2 sundried tomatoes, chopped
finely grated zest of 1 lemon, plus extra wedges
1 tbsp The Co-operative extra virgin olive oil
method
Preheat the oven to gas mark 6/200°C /fan 180°C. Line a baking sheet with foil and add the salmon fillets.
Mix together the breadcrumbs, gherkins, olives, tomatoes and lemon and season with salt and black pepper. Top the salmon fillets with the mixture and drizzle with the oil.
Bake for 20 minutes until the topping is golden and the salmon is cooked through. Serve with new potatoes and mixed salad leaves, and garnish with lemon wedges and chopped chives.
