fruity ice cream bombe

ingredients

1 litre (1¾ pint) The Co-operative vanilla ice cream
120g (4oz) The Co-operative luxury dried mixed fruit
85g (3oz) glacé cherries
25g (1oz) Dr Oetker crystallized ginger
glacé cherries and ginger to garnish

 

method

Place ice cream in a large bowl and quickly beat to soften.

Add the dried fruit, glacé cherries and ginger and mix well, working quickly. Turn mixture into a 1 litre (1¾ pint) basin, cover and freeze until firm.

Turn out onto a serving plate and decorate with glacé cherries and ginger. Do not re-freeze this dessert after serving.
