Fruity pancakes

ingredients

100g (3½ oz) plain flour
2 free-range eggs, beaten
300ml (½ pint) semi-skimmed milk
50g (1¾ oz) butter
75g (2¾ oz) demerara sugar
2.5ml (½ tsp) ground cinnamon
2 bramley apples
170g punnet raspberries
carton of The Co-operative healthier choice fresh custard

 

method

Make and cook 8 pancakes following basic recipe.

Meanwhile melt 50g (1¾ oz) butter, 75g (2¾ oz) demerara sugar and 2½ ml (½ tsp) ground cinnamon in a pan. Add 2 peeled, cored and sliced bramley apples and cook for 8–10 minutes.

Add 170g punnet raspberries and cook for a further 5 minutes, until softened.

Divide the apple mixture between warm pancakes and spoon over 1 carton fresh custard. Serve.
