Gazpacho (chilled tomato soup)

ingredients
1 packet The Co-operative Truly Irresistible Elegance tomatoes on the vine
1 large red pepper, deseeded
1 large yellow pepper, deseeded
1 small cucumber, peeled
2 cloves of garlic, peeled
1 small white onion
1 tin of chopped tomatoes or the equivalent amount of tomato juice
2 tbsp The Co-operative olive oil
4 tbsp red wine vinegar
fresh coriander to garnish
method
Roughly chop the tomatoes, cucumber, garlic and onion and dice the red and yellow peppers. Set aside half of the diced red pepper and half of the diced yellow pepper for later.
Place the rest of the chopped ingredients into a food processor with the red wine vinegar, the olive oil and the chopped tomatoes or tomato juice and blend until smooth.
Place the mixture into a bowl, cover and place in the fridge for at least one hour.
When you’re ready, ladle the soup into bowls and pile the remaining red and yellow pepper evenly in the centre of each bowl of soup, with some chopped coriander. Season to taste.
