Gourmet BLT with Avacado

ingredients

6 slices The Co-operative smoked back bacon
1 little gem lettuce, finely shredded
1 tsp good quality mayonnaise
4 slices The Co-operative wholemeal bread (medium sliced)
1 avocado
1 lemon
2 tomatoes, sliced
salt & pepper

method

Put the bacon under a hot grill and cook until crisp.

While the bacon is cooking, mix the finely shredded lettuce with the mayonnaise until evenly coated.

Toast the bread.

Peel and carefully slice the avocado, squeeze over the lemon and season to taste.

Once the bread has toasted, lay out two slices and divide the lettuce mixture between them. Top with three slices of bacon on each, followed by sliced tomato and then avocado.

Top the sandwiches with a second slice of toast and cut into triangles.

Serving suggestion

Light & lean: The Co-operative mixed herb and leaf salad. Hungry & healthy: oven-baked homemade potato wedges.

Tip

Trim the fat from the bacon and use The Co-operative Healthier Choice mayonnaise to make this a less-calorific option.
