225g mushrooms, thickly sliced (portobello are excellent for this)Half an onion, finely chopped1-2 garlic cloves, crushed and finely chopped (or about an inch from a tube of ready prepared garlic)28g butter Half a glass of dry sherry140g double cream Four slices of good bread (I used ciabatta) toasted, drizzled with extra virgin olive oil and kept warm
Melt the butter in a frying pan and cook the onion and garlic until soft.Add the mushrooms and cook until juice comes out of them.Add the sherry and cook for 2-5 minutes to reduce a good bit.Add cream and warm through.Place on the toasted bread and serve.
