Grown-up mushrooms on toast

ingredients
225g mushrooms, thickly sliced (portobello are excellent for this)
Half an onion, finely chopped
1-2 garlic cloves, crushed and finely chopped (or about an inch from a tube of ready prepared garlic)
28g butter
Half a glass of dry sherry
140g double cream
Four slices of good bread (I used ciabatta) toasted, drizzled with extra virgin olive oil and kept warm
method
Melt the butter in a frying pan and cook the onion and garlic until soft.
Add the mushrooms and cook until juice comes out of them.
Add the sherry and cook for 2-5 minutes to reduce a good bit.
Add cream and warm through.
Place on the toasted bread and serve.
