Jersey new potato salad with crispy bacon & spring onion

ingredients

500g (1lb 2oz) The Co-operative new potatoes
4 rashers back bacon
30ml (2tbsp) The Co-operative olive oil
5ml (1tsp) wholegrain mustard
lemon juice
4 spring onions
15ml (1tbsp) parsley
 

method

Lightly scrub the new potatoes; do not peel. Cook in boiling water for about 15 minutes. Drain.

Grill 4 slices of back bacon until crispy; cut into pieces. Mix 30ml (2tbsp) olive oil and 5ml (1tsp) wholegrain mustard or Dijon mustard with a good squeeze of lemon juice. Mix into the hot potatoes until coated.

Finely slice 4 spring onions and sprinkle over the potatoes with the bacon and 15ml (1tbsp) of finely chopped parsley.
