500g (1lb 2oz) The Co-operative new potatoes4 rashers back bacon 30ml (2tbsp) The Co-operative olive oil 5ml (1tsp) wholegrain mustardlemon juice4 spring onions15ml (1tbsp) parsley
Lightly scrub the new potatoes; do not peel. Cook in boiling water for about 15 minutes. Drain.Grill 4 slices of back bacon until crispy; cut into pieces. Mix 30ml (2tbsp) olive oil and 5ml (1tsp) wholegrain mustard or Dijon mustard with a good squeeze of lemon juice. Mix into the hot potatoes until coated.Finely slice 4 spring onions and sprinkle over the potatoes with the bacon and 15ml (1tbsp) of finely chopped parsley.
