Lamb burgers with soft cheese and garlic filling

ingredients


for the burgers

675g lean minced lamb
1 small onion, finely chopped
4 tbsp fresh mint, chopped
salt and freshly ground black pepper
plain flour, to shape


for the filling

75g soft cheese
1 clove garlic, crushed
1tbsp fresh mint, chopped
vegetable oil
wholemeal buns and green salad for serving


 

method

In a large bowl, mix together all the ingredients for the burgers until thoroughly combined.

With lightly-floured hands divide mixture into eight equal portions and flatten into thin rounds.

In a small bowl, mix together the soft cheese, garlic, mint and seasoning.

Place a quarter of the cheese filling onto 4 of the burger rounds.

Place another burger round on top, and mould around the filling to make 4 larger burgers.

Brush with oil and grill for about eight minutes on each side.

Serve in wholemeal bun with a green salad.
