Lemon Tuna with Houmous and carrot ribbons

ingredients

1 tin The Co-operative skipjack tuna in spring water
1 lemon
The Co-operative wholemeal bread (medium sliced)
houmous
Ground cumin
Handful of watercress
1 large carrot, cut into ribbons with a peeler or grated if preferred
A handful of fresh basil leaves

method

Drain the tuna and break up with a fork. Squeeze the lemon juice over stir into the fish.

Spread houmous onto two pieces of bread, sprinkling a little cumin on top. Cumin is very strong so you only need a tiny bit.

Top the houmous with watercress and carrot ribbons, then add the tuna and fresh basil.

Top the sandwiches with a second slice of bread.
