1 tin The Co-operative skipjack tuna in spring water1 lemonThe Co-operative wholemeal bread (medium sliced)houmousGround cuminHandful of watercress1 large carrot, cut into ribbons with a peeler or grated if preferredA handful of fresh basil leaves
Drain the tuna and break up with a fork. Squeeze the lemon juice over stir into the fish.
Spread houmous onto two pieces of bread, sprinkling a little cumin on top. Cumin is very strong so you only need a tiny bit.
Top the houmous with watercress and carrot ribbons, then add the tuna and fresh basil.
Top the sandwiches with a second slice of bread.
