ingredients
4 x The Co-operative Healthy Living Elmwood chicken breast fillets
8 tbsp soy sauce
2 garlic cloves, finely chopped
1cm piece ginger, grated
1 tsp of The Co-operative sesame seeds
2 tbsp of The Co-operative New Zealand clover honey
½ cucumber, sliced
1 tbsp of freshly chopped mint
2 spring onions, shredded
3 tbsp of The Co-operative reduced fat mayonnaise
2 tbsp sweet chilli dipping sauce
4 x The Co-operative Truly Irresistible seeded batch rolls, toasted
method
Place the chicken between two sheets of clingfilm and give it a gentle bash with a rolling pin until flattened out.
In a large bowl, mix the soy sauce, garlic, ginger, sesame seeds and honey, then add the chicken and mix well. Leave to marinate for 10 minutes.
In a small bowl, mix the cucumber, mint and spring onions together. In a separate bowl, combine the mayonnaise with the sweet chilli sauce.
Cook the marinated chicken under a preheated grill for 10 minutes, turning half-way through.
Serve the cooked chicken in the toasted baps with lettuce, the salad and a dollop of sweet chilli mayo.
Top tip – get the kids to help with basting the chicken, as it will get rid of any surplus energy!
