Pork satays with spicy peanut sauce

ingredients

2 fresh pork loin steaks
30ml (2 tbsp) coconut milk
30ml (2 tbsp) crunchy peanut butter
½ large red chilli
½ clove garlic
5ml (1 tsp) soy sauce
5ml (1 tsp) lemon juice

 

method

Trim any excess fat from the pork, cut into thin strips, and thread onto bamboo skewers.

Mix together the coconut milk and peanut butter. Finely chop the chilli, crush the garlic and add with the soy sauce. Add a squeeze of lemon juice.

Place half in a small bowl for dipping.  Use the remainder to coat the satays (pork on skewers). If you have time, leave to marinate for 20–30 minutes.

Cook the skewers on a hot griddle for approximately 15 minutes, turning halfway through. Serve with the sauce.
