Salmon fillets with potatoes and watercress

ingredients

1 x 500g packet new baby potatoes
2tbsp olive oil
4 x The Co-operative salmon fillets
juice and pared rind of 1 lime
cucumber, halved lengthways and sliced
1 x 85g packet watercress


for the dressing

1 x 150ml bottle Healthier Choices Caesar dressing
bunch coriander, chopped
4tbsp soured cream


 

method

Boil the potatoes for 15 minutes, until tender, then drain and cool.

Heat the oil in a pan and add the salmon, flesh side down. Cook for 4 minutes over a high heat. Reduce heat and turn the fish.

Cut the pared lime rind into strips, and add to the fish with the lime juice. Cook for a further 4 minutes until cooked through.

Mix together the dressing ingredients and drizzle over the salmon, potatoes, cucumber and watercress.
