Salmon linguine

from the cupboard

350g dried linguine (or pasta of your choice)


ingredients to buy

1 garlic clove, crushed
a large pinch crushed chillies
60ml freshly squeezed
lemon juice
3 x 100g packets hot smoked salmon flakes
100g baby spinach leaves

 

method

Cook the dried linguine (or pasta of your choice) according to the packet instructions. Drain, reserving 75ml of the liquid, and set aside.

Pour the reserved cooking liquid back into the saucepan. Add the crushed garlic, the crushed chillies and lemon juice.

Bring to the boil and cook for 1-2 mins.

Add the salmon flakes, the drained pasta and spinach leaves, then stir until the leaves have wilted. Serve immediately.
