Seafood tagliatelle

ingredients
375g dried tagliatelle
225g Truly Irresistible cherry on the vine tomatoes
90ml (3fl oz) olive oil
½ red chilli, deseeded and finely chopped
pared rind of ½ lemon, cut into matchsticks
2 x 150g packets Truly Irresistible farmed king prawns
juice of 1 lemon
125g packet Truly Irresistible hot smoked trout, cut into strips
50g wild rocket
30ml (2 tbsp) freshly shredded basil leaves
method
Preheat a grill and cook the tomatoes until tender. Cook the pasta following packet instructions.
Meanwhile heat 30ml (2 tbsp) of the olive oil in a pan and cook the chilli and the lemon rind for 1 minute. Add the prawns and cook for 3 minutes.
Add the remaining oil and lemon juice and bring to the boil.
Drain the pasta and return to the pan. Stir in the remaining ingredients and prawn mixture. Serve immediately.
