Turkey and pasta soup

ingredients

2 tbsp The Co-operative olive oil
1 large onion
100g (3½oz) chorizo sausage slices
3 garlic cloves, crushed
1 celery stick, finely chopped
400g (14oz) The Co-operative chopped tomatoes
2 tbsp chopped fresh thyme or parsley
½ tsp dried oregano
750ml (1¼pt) chicken stock
200g (7oz) leftover turkey, chopped
100g (3½oz) The Co-operative spirali pasta
150g (5½oz) Savoy cabbage, finely shredded

 

method

In a large saucepan, gently heat the olive oil and cook the onion, chorizo, garlic and celery for 5 minutes over a low heat. Next add the tomatoes, herbs and stock. Simmer for 10 minutes, then season to taste with salt and pepper.

Add the turkey and the spirali pasta. Continue cooking for a further 10 minutes over a low heat.

When ready to serve, add the Savoy cabbage to the soup and cook for 1 minute until it is just wilted. Ladle into warmed, waiting bowls.


top tip

This soup, which is low in saturated fats, is delicious served with a slice of toast topped with melted cheese and a spoonful of The Co-operative pesto.
