Whip up a colourful Mexican feast that’s sure to please the whole family with some delicious recipe ideas from our resident foodie, Carla Mills… 

  • Share a platter of irresistible nachos – bake corn tortilla triangles until crisp, then top with grated cheese, chilli beans, salsa, sour cream and guacamole.


  • Make crisp quesadillas to cut into wedges and share – dry-fry flour tortillas filled with cheese, salsa and cooked spicy chicken or Mexican-style beans.


  • Make an easy dinner with flour tortillas and your favourite filling of smoky chicken breast, spiced steak, juicy prawns or sweet roasted vegetables, and beans – choose between sizzling fajitas, oven-baked burritos topped with salsa or rolled enchiladas baked under a spicy tomato sauce.


  • Layer a rich chilli con carne between flour tortillas, bake and top with sour cream and cheese for a Mexican-style ‘lasagne’.


  • Make Mexican burgers with beef, pork or turkey mince, flavoured with lime zest, chilli and Mexican spices. Grill and serve in tortillas with lettuce, salsa and guacamole.


  • Chargrill strips of fresh salmon fillets or tuna steak marinated in spices, olive oil and lime juice, and serve in crisp tacos with fresh salad leaves.


  • Make a speedy side of re-fried beans by cooking onions and garlic with kidney or pinto beans, chopped tomatoes, and warming spices of chilli, paprika and cumin. Mash to a rough puree and serve warm.


  • Bake crisp white and sweet potato wedges brushed with olive oil and cumin, and top with cheese, chilli or salsa.


  • Cook long-grain rice with onion, garlic, cumin, chopped peppers, tomato passata and vegetable stock for a richly flavoured side dish.


  • Whiz creamy ripe avocados with finely chopped fresh tomatoes, lime juice, crushed garlic, red chillis and fresh coriander for a cooling guacamole.


  • Whip up a delicious tangy homemade salsa with chopped fresh tomatoes, diced red onions, crushed garlic, fresh coriander and chopped green chilli.


  • Serve a crisp green salad of shredded sweet romaine hearts drizzled with a homemade citrus fruit and chilli dressing


  • Chargrill or barbecue corn cobs and serve with butter flavoured with red chilli and lime.


  • Serve a tempting churros-style dessert with chunks of ring doughnuts and a rich warm chocolate dipping sauce.


  • Indulge in banana slices warmed in a rich caramel sauce and served over sweet waffles or pancakes.


  • Opt for a refreshing fruit sorbet served with crisp baked cinnamon-sugar dusted tortilla triangles.
