spicy salmon rolls

ingredients 200g smoked salmon 100g The Co-operative 4% fat cream cheese 1 avocado Juice of half a lemon ½ tsp dried chilli flakes 1 generous handful of rocket, chopped |
method
Spread a layer of clingfilm on a chopping board. Arrange slices of salmon on it in a rectangular shape. Put cream cheese in a bowl and mix with a fork. Chop avocado into small pieces and gently mix into the cheese. Add lemon juice, chilli flakes and season to taste with a good grinding of black pepper. Spread over salmon slices and then gently roll up and cover with clingfilm. Place in the freezer for 10 to 15 minutes, then slice into thinnish rounds and serve with rocket leaves and chopped cucumber, lightly dressed in lemon and olive oil.
